Gli spaghetti alla milanese (‘A la milanisa)

Spaghetti alla Milanese is a dish famous for its flavor. But it also has another reputation: It deceives at first glance. Because, despite the name Milan, it is a typical Sicilian recipe that has nothing to do with Lombardy. And once you taste it, it is an indispensable taste.
Although the name misleads us, after we start eating Spaghetti alla Milanese, we understand that it is a Sicilian delicacy. Because we find many Sicilian flavors and ingredients in it. Its preparation is extremely simple and fast. Whether it’s a daily family meal or for our guests we want to gather around a big table, it is a wonderful presentation meal that we can serve with wine.
So, let’s see together how to prepare the perfect Milanese spaghetti.
Spaghetti alla Milanese recipe
Ingredients: for 4 people
400 g of Spaghetti
500 ml of tomato sauce
200 g of anchovies
150 g of cherry tomatoes
100 g of breadcrumbs
40 g of tomato paste
2 cloves of garlic
Extra virgin olive oil
Fine salt
Black pepper
Preparation
First, we prepare our sauce. Heat some extra virgin olive oil in a pan and fry it until the breadcrumbs turn colour.
Then we move on to the fish. We wash the anchovies thoroughly, separate the bones, put them in the pan with a clove of garlic and extra virgin olive oil. While mixing, we cut the anchovies into small pieces. Then add tomato sauce and tomato paste. We season it with salt and pepper. Continue cooking for about 20 minutes or until the sauce thickens and becomes very thick.
Meanwhile, we boil salted water, add half a spoon of olive oil and cook the spaghetti al dente (a little hard).
Then we wash the cherry tomatoes, cut them into halves and quarters. We put it in a pan with a clove of garlic and extra virgin olive oil. Season with salt and pepper and continue cooking for a few more minutes.
And the final: The spaghetti, once drained, will be seasoned with the previously prepared sauce and then with an abundant sprinkling of breadcrumbs. Mix everything well and also add some tomatoes, which will be used to make the dish more special.
*Serve the Milanese spaghetti when they are hot. Alternatively, you can prepare bigoli in sauce or casarecce with swordfish and aubergines.
