Today we prepare together a really easy, and delicious dish perfect for any occasion. Eggplant rolls with smoked provola and cooked ham. These rolls are really tasty and perfect for a different lunch or dinner, as well as for appetizers, aperitifs and buffets.

Eggplant rolls stuffed with a slice of ham and smoked provola recipe

Ingredients for 4 people

2 eggplants
6 slices of cooked ham
Parmesan
Basil parsley
1 tomato
1 egg
salt
Flour
Fry oil

Preparation

1. To prepare these delicious eggplant rolls, start by cutting the eggplant into slices that are not too thick but not too thin. It would be better to use long and not round aubergines to have larger slices.

2. Mix the scrambled eggs, parmesan, parsley and basil in a bowl.

3. Chop the tomatoes into small pieces, fry them in a lightly oiled pan for 1-2 minutes.

4. After dipping the eggplant slices in flour, dip them into the mixture you prepared

5. Fry the eggplant slices for a couple of minutes on both sides.

6. Take the slices on the paper towels you prepared before to absorb the excess oil.

7. Put smoked cheese and ham on each slice and roll up.

 And the final: put the piece of cooked tomato on the roll and fasten it all with a toothpick. Serve at room temperature.
